THE REAL ORIGINAL SWAHILI PILAU RECIPE
INGREDIENTS
1.Boil the meat until tender. . Once cooked, drain the remaining broth into a container and put aside.
2.In a Pot add the cooking oil and heat till hot then add onions. Fry till golden brown THEN
3.Add crushed ginger and garlic then stir. Let it cook for three minutes.ADD the boiled beef you set aside earlier. Stir and cook till beef is brown
4. Add pure ground pilau masala ,Cumin , cardomon pods, cinnamon stick ,cloves the black pepper.( throw it all in there) Let the mixture simmer for about TEN minutes.
5. Then add four to five cups of the meat broth. Top up with hot water(if broth is not enough) .Sprinkle some salt to taste
6.Wash the rice. After the water or broth has boiled, add the rice. Cook under low heat until all water has dried up or until ready.
Pilau goes well with kachumbari, and a stew on the side or better a ripe banana
- 1/2 Kilo beef (1 pound beef)
- 4 cups of Basmati Rice
- 2 medium Onion diced
- 1 tbsp cumin
- 1tbsp black pepper
- 1 tbsp crushed ginger( or you can purchase ginger-garlic paste instead)
- 1 tbsp crushed garlic
- 1 tsp salt
- 6 cardamon pods
- 1 whole cinnamon stick
- 6 cloves
- 1tbsp of pure ground pilau masala( mixed ground spice is OK)
